In the case of poor or excessive maturation of the grapes, the technology of evaporation in cold allows winemakers to obtain a final product that respects the quality and typicality of the grapes.

The centrifugal force of the clarification technology is used instead to clarify the must of those solids which could alter the quality of the final product or, before bottling, to obtain a clearer and brighter wine.
