DEALCOHOLIZATION

Dealcoholization performed with REDA technology helps to adjust defects that may arise during or at the end of vinification processes, for instance due to specific climate conditions.

This technology is used to reduce the alcoholic content of wine, in case of excessive ripening of the grapes or to follow market trend that requires less alcoholic wines.

TECHNICAL FEATURES

REDA DVR unit performs a type of fractional distillation at low temperature (+15°/18° C) through under vacuum controlled evaporation.

This technique allows the partial or total dealcoholization of wine and allows one to process either the total mass or only a part of the wine (eg. 10-20% of the mass).

The system ensures the recovery of the aromatic fractions with no loss in terms of perfumes and respect of wine typicity.

REDA DVR can also operate as concentrator.

THE EUROPEAN NORMATIVE

– The partial dealcoholization of wines is permitted up to -2° Alcohol and it is regulated by Directive no.CE 606/2009.

– The technique of partial dealcoholization of wines under vacuum is the only method permitted since ever by the Code of the International Organization of Wine OIV.
